 "Lake Nacimiento is just outside of Paso Robles, in the Central Coast of California.  It has always been a place for me to escape the hustle and bustle of the big city. I used to come to this place to vacation and relax and now finally I can call this amazing place home. I grew up in Los Angeles working a trade in art and graphic design for over 20 years until I had to chance to uproot my old ties and move to this paradise permanently in 2012. I picked Nacimiento because of its scenic beauty, geographic isolation and old town charm, a perfect inspiration to create and explore new opportunities.
 This website is not only a promotion tool for my artwork and design skills but also a fun and interactive way to show others how wonderful this place is.  I hope you find Naci Design informative, entertaining and productive, I’ve had a blast working on this project,

LET IT RAIN!

A lot is going on around the ranch.  New mama sheep and their babies have arrived and now call the pen in our guest garden home.  Our mamas goats are pregnant.  Our community garden is up and running. 

And IT'S RAINING!

Finally the rain has come and it looks like it is staying for the next two weeks.  On and off, of course, but we will take what we can get!

 winter recipe: Creamed Kale

INGREDIENTS

  1. 1 tbsp butter
  2. 1/4 cup onion, minced
  3. 2 garlic cloves, minced
  4. 2 tbsp flour
  5. 1.5 cup nonfat milk
  6. 1/2 cup Parmesan cheese
  7. Salt and pepper
  8. 1/16 tsp. nutmeg
  9. 4 oz reduced fat cream cheese
  10. 16 oz kale

Directions

  1. Microwave, steam, or saute the kale until tender. Drain any excess liquid. You can also use frozen defrosted kale.
  2. Preheat the oven to 400 degrees.
  3. Preheat a skillet over medium heat. Add the butter and when melted, add the onion and garlic. Cook for 5 minutes until fragrant and translucent.
  4. Whisk in the flour and cook for one minute until it begins to brown. Whisk the milk in slowly.
  5. Add 1/4 cup Parmesan cheese, salt, pepper, nutmeg, and cream cheese. Stir gently until melted.
  6. Add the kale and stir together.
  7. Pour into a baking dish coated with cooking spray and sprinkle remaining Parmesan on topTop with buttered toasted bread crumbs. Bake for 10 minutes.

Try out this decadent recipe:

Chocolate Chocolate Tart

CRUST

  • 1 ½ cups AP flour
  • ½ cup unsweetened cocoa powder
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 cup butter

FILLING

  • 1 ¼ cups heavy cream
  • 9 ounces bittersweet chocolate (not more than 65% cocoa if marked), chopped
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt

GLAZE

  • 2 tablespoons heavy cream
  • 1 ¾ ounces bittersweet chocolate, finely chopped
  • 1 teaspoon light corn syrup
  • 1 tablespoon warm water

equipment: a 9 inch round fluted tart pan (1 inch deep)

instructions:

  1. Make the crust: Prepare crust by combining all crust ingredients in a food processor. Process until a ball a forms. press into a tart pan bake 10 minutes at 350 degrees. Let cool before filling.
  2. Make the filling:  Bring cream to a boil, then pour over chocolate in a bowl and let stand 5 minutes. Gently stir until smooth. Whisk together eggs, vanilla, and salt in another bowl, then stir into melted chocolate.
  3. Pour filling into cooled crust. Bake until filling is set about 3 inches from edge but center is still wobbly, 20 to 25 minutes. (Center will continue to set as tart cools.) Cool completely in pan on rack, about 1 hour.
  4. Make the glaze:  Bring cream to a boil and remove from heat. Stir in chocolate until smooth. Stir in corn syrup, then warm water Pour glaze onto tart, then tilt and rotate tart so glaze coats top evenly. Let stand until glaze is set, about 1 hour.

 
 

Fresh Tastes From the Garden- olive oil

Our olive tree orchard is really coming along!  With over 30 trees and 3 years growth time, they are established and fruiting!  This year we teamed up with friends Sharon and Greg to harvest and press our very own olive oil.

a note about NIÇOISE olives

"Grown on a variety of olive tree called "Le Cailletier," demure Niçoise olives are a crucial ingredient in the classic dishes of the French Riviera—think salade Niçoise and tapenade. But they're equally wonderful nibbled on their own. A bit assertive, but not overpowering, the Niçoise has an enticingly herbal fragrance with faint notes of licorice."
